African Yam Flour (Amala flour)

African yam flour, also known as sweet potato flour and amala, is prepared by grinding dried yams until they reach a powdered consistency. Dehydrated flour from yams may also be produced from drying in the sun. Yams are peeled, sliced, cleaned, dried and then blended into a flour, also called elubo. Yams are white in colour but turns brown when dried; this gives amala its color. Traditional amala flour is prepared with just yam flour and water. The flour is boiled until a dough is formed. The dough is then simmered in a small amount of water and kneaded before being served with a type of stew, such as one made from traditional vegetables and meats or fish.

Yams are  an excellent source of Vitamin C to help fighting infections such as colds and flu, promotes quick wound healing, anti-aging, strong bones, and healthy immune function. Yam flour provides great amounts of fiber, potassium, manganese, and metabolic B vitamins. The content of vitamin B6 is good for shrinking the effects of homocysteine, which can cause damage to cell walls, leading to heart attacks and/or stroke.
Additionally, yam flour contains healthy antioxidants which also contain anti-inflammatory properties. The Vitamin C and beta carotene in yam flour work well to get rid of causing free radicals. The high amounts of dietary fiber in yam flour also reduces constipation and decreases bad cholesterol.
